The Hacienda’s Rancho Jabalí consists of over 5,000 acres of stunning mountain landscape energized by the towering Volcán de Fuego – where wild horses roam, livestock thrives, crops flourish and a vast network of lagoons hide amongst jutting hilltops fringed by fields and forest.

Within this sprawling highland ranch a dedicated staff carries out various practices and is involved in local initiatives to protect the environment. The operation overall supports local communities by encouraging and innovating sustainable practices via organic agriculture, horticulture, orchards and the coffee plantation.

One of the main practices used on the ranch is Biodynamic farming, from which hundreds of acres have transformed into thriving organic gardens, yielding our healthiest and most lush produce to date. Nearly 90% of all ingredients used in our à la carte menu are sourced from the ranch. The utmost respect and care we put into our produce and our environment is reflected in every meal.

What Is Biodynamic farming? Biodynamics is a holistic, ecological, and ethical approach to farming, gardening, food, and nutrition. Biodynamics is rooted in the work of philosopher and scientist Dr. Rudolf Steiner, whose 1924 lectures to farmers opened a new way to integrate scientific understanding with a recognition of spirit in nature.

Across the river valley, adjacent to Hacienda de San Antonio, lies the vegetable gardens and livestock pens. Guests can tour these gardens upon request and be guided by one of the lead farmers, who will show them all the in season organic produce, which will be harvested mutliple times throughout the week and star in all of the hotel's delicious meal services and picnics throughout their stay.

Daily tours of the ranch and it's many processes can be scheduled, where guests will see cheese making, the artisanal coffee roasting operation, where all fruit is processed for jams and more, even including delicious mangos from the hotel's coastal sister property -Cuixmala, all followed by a sampling of the freshest and purest products Rancho Jabalí provides.

A final touch, and one of Rancho Jabalí's best souvenirs for all Hacienda guests, is it's signature and exclusive apéritif, Mangrappa. A spin on the Italian grappa, this unique and delicious pomace-brandy is made from Cuixmala Mangos. A complimentary bottle awaits all guests inside each suite's minibar.
