HISTORYThe story of this highland paradise begins as far back as 1879, once the center of a coffee plantation so revered it was served exclusively in the New York Waldorf Astoria, and drank by the German Imperial family. Over time the property passed through various ownership, withstood wars, and outlasted volcanic eruptions all to eventually be acquired by Sir James Goldsmith, who would go on to transform it into what it is now — a sprawling boutique hotel thriving under continued family ownership. The adjoined timeline highlights some of the countless landmark events through the Hacienda’s journey since its creation in the 19th century.

History

THE ESTATELocated at the foothills of Volcano of Colima, the Hacienda’s grounds are a place blessed with eternal spring, with exuberant and extraordinary gardens unfolding into immense vegetation and the hacienda’s own working ranch, Rancho Jabalí, the source of nearly all produce, meat, cheese and more that is served in the hotel.

The main structure of the Hacienda once was a utilitarian array of storehouses and machinery rooms for the plantation, they have since been brought to new life providing the ornate living spaces guests enjoy. A mirrored dining room and main living room boast brick Catalan vault ceilings suspended over volcanic stone fireplaces, and handwoven Portuguese rugs, double French doors open onto sprawling gardens, loosely designed after the Alhambra’s in Spain. An antique sombrero adorned billiard room with an adjoined bar, a few steps from the immense volcanic stone arched club room provide ample space for evening revelry. Guests can wander the corridors endlessly throughout a stay at the Hacienda to find new and intriguing corners and artifacts, that all comprise a truly authentic Mexican Hacienda experience.

GUEST EXPERIENCEEach day a painterly sunrise greets travelers staying in any one of the Hacienda’s 25 suites, awakening to either Volcano, Garden or Terrace views of the surrounding highlands. Breakfast is enjoyed on the dining terrace overlooking the ornate gardens before embarking on a day of adventure chosen from an extensive list of activities as leisurely or invigorating as one desires.

Lavish picnics can be arranged in some of the most picturesque corners of Rancho Jabalí and arrived to by a number of means varying from quads, to bicycles or even by horseback. Ranch tours will show guests the endless beauty of the land and the tireless dedication that goes into the organic production of nearly all food served throughout the hotel. For the most timeless of entertainment traditional horsemen and women of Mexico, Charros and Escarmuzas, will demonstrate their incredible skills during a charreada, a traditional Mexican rodeo. In the evenings, the Hacienda takes on a dreamlike glow under candlelight, where guests may enjoy private dinners set in one of the living spaces beside a crackling fire, or groups join to dance and dine while Mariachi perform live on the Mirador terrace.
