Rise and shine in the early morning and assist in the daily milking of Rancho Jabalí’s dairy cows. At the center of the ranch every morning gallons of fresh milk are collected to go directly into cheese production, ice cream, and butter making processes. But, before all the milk is carted off to be utilized in the aforementioned processes, guests cannot surpass the opportunity to indulge in a ‘Pajarete’, a traditional practice by ranchers where fresh milk is combined with high-proof alcohol and sometimes chocolate or coffee to really kick-start the day.
